Easy Instant Pot Cornish Hen with Browned Rice
The Instant Pot Cornish Hen and Brown Rice recipe are perfect for a weeknight dinner or a Sunday meal with family and friends. It’s a one-pot dish that takes less than an hour to make, plus, it all cooks in one pot so you don’t have to dirty any extra dishes.
Ingredients:
Cornish hen (20oz or so)
Extra virgin olive oil
Salt
Poultry seasoning
Garlic cloves, whole
Bay leaves
Lemon, quartered (half for cooking, half for serving)
Chicken stock
Brown rice, rinsed
Scallions, chopped
Making The Cornish Hen & Browned Rice In The Instant Pot
Season the hen generously with salt, pepper, and poultry seasoning. Be sure to rub the seasoning all over the bird, including beneath the skin.
When the IP Mini’s display reads “HOT,” add the olive oil and heat on saute. The hen should be cooked for 6 to 8 minutes on each side, or until the skin is well browned and comes off the meat easily. Toss the hen into a dish.
Pour in the chicken stock to wipe the pot’s bottom. Make sure to remove any of the browned pieces that have clung to the bottom.
Add some lemon juice to the pot along with the washed brown rice. Stir to blend and spread the mixture evenly.
Put a trivet inside the pot, then place the browned hen on it. Put lemon wedges, bay leaves, and garlic in the hen’s cavity.
Secure the lid and cook on manual/high for 15 minutes, then let the pressure naturally release for 10 minutes. Reopen the lid after manually releasing any remaining pressure.
Transfer the hen to a platter or cutting board.
Mix the rice with the chopped scallions.
Serve the bird with rice and a touch of lemon on the side.
