Super Fast and Delicious Pulled Pork Tenderloin Recipe

Dry Rub and Searing the Pork Tenderloin
Let’s start with the dry rub. Take all the dry spices and coat the pork tenderloin with it. I’ve trimmed off the little bit of fat that was on this tenderloin because we don’t need it. Once we’ve completed the dry rub, set the Instant Pot to sauté on high with a drizzle of avocado oil, heat it up, and then put the pork tenderloin in there. It’s really important to let it sit on the bottom for about 35-40 seconds to sear, and we’re doing this on all sides. You can skip this step if you don’t want to bother with the searing, but I highly recommend it because you gain a lot in the flavor department.
Adding Water and Degassing the Pan
Once we’ve got all sides seared, pull it out, and pour some water inside the Instant Pot. This is going to help the Instant Pot to pressurize, but we’re also deglazing the bottom of the pan, scraping all those burn bits off. Very, very important! Place the trivet in now.
Preparing the Sauce
Get our sauce ready by combining honey and brown sugar (you can use coconut sugar if you prefer). I’m using equal parts of honey and brown sugar. Now we’re going to coat the pork tenderloin with this sauce. This is really going to ramp up the flavor of this pork tenderloin while still keeping it neutral, so you can utilize the pulled pork in many different types of dishes.
Pressure Cooking the Pork Tenderloin
Slather the sauce on the pork tenderloin, place it inside the Instant Pot on top of the trivet, and then add the last little bit of sauce right on top. Grab the lid, make sure the silicone ring is on, and hit cancel on the Instant Pot. Set it to high pressure (this might be pressure cook on your model or manual), and we want 20 minutes. After the cooking process has completed, we’re going to allow a 10-minute natural pressure release. This is going to ensure that the pork tenderloin is perfectly tender and absolutely delicious.
Quick Release and Shredding the Pork
Now it’s time to do a quick release. Use the back of the spoon so you don’t burn your hand. There was not very much pressure left in here. Make sure the pin drops before you try to open the lid. Next, it’s time to open the lid and look at this delicious pork tenderloin. We can disregard what’s in the pot because we don’t need it for this recipe. Now we are going to shred this pork. You can use two forks or a fancy gadget, but it is so incredibly easy to shred.

Instructions
- Trim any excess fat from the pork tenderloin and coat it with a dry rub of your choice.

- Remove the pork, add water to the pot, and use it to deglaze the bottom.
